Sweet and Crunchy Rice

Prep. Time: about 20 minutes. Cost: about €1.00 per person.

Boil basmati rice, rinsing with freshly boiled water 3-4 times until excess water pours clearly.

Toast a large beer-mat sized amount of Sunflower seeds [on tinfoil] in grill on medium-high heat for 3-5 mins until you can smell them. Chop 5 Cherry Tomatoes in half and place flat side down over the seeds. Cover the remaining seeds with sweetcorn and place under grill to heat, while you wait for the rice to reach your desired texture.

Create a valley from your rice on the plate and fill using the tinfoil as a funnel for the remaining ingredients. Grab a fork and chew thoroughly 😉
